THE BEST easy 3 ingredient chocolate chip pumpkin cookies!

Move aside every other chocolate chip pumpkin cookie, because these are the best! I have been making these pumpkin chocolate chip cookies for years and all of my family and friends expect to see them from me as soon as fall comes around (I never disappoint). They’re that good. Even my boyfriend, Eli, who isn’t as much of a pumpkin person as I am, loves these (just made him a double batch!).
These cookies were first inspired by my mom (again!) – every year she makes a pumpkin pineapple cake that is so good. She doesn’t make it from scratch: she uses the Krusteaz or Libby’s pumpkin bread box to make it. These boxes come with the pumpkin bread dry mix and one can of pumpkin and the baker is supposed to add eggs and oil, and my mom adds pineapple to it and uses a cake pan instead of a loaf pan (it is literally so good). Every time I would see her make one of these bread loaves I thought, well in these boxes is basically a spice cake mix and the pumpkin as the main ingredients. I wondered how this pumpkin bread would taste without the olive oil and eggs, since I make eggless recipes all of the time (only because my sister, Kelly, is notorious for testing the dough excessively and eggless gives her big sis peace of mind; if you haven’t checked out my other eggless dessert recipes, definitely do so here!). And then I tried it of course, and I changed the loaf to a cookie because I love pumpkin cookies more.
So I got one regular spice cake mix and added one can of pumpkin and chocolate chips, mixed it all up and baked it into cookies. They were AMAZING. And that is how these cookies were born. That was when I was in college in 2009 so I have been baking these cookies for 11 years and counting! All of my family and friends love them and now expect them from me come October. I serve them at every fall dinner party I’ve hosted and make them for Friendsgiving, which I host every year too. They’re the best because they not only taste so good, but also because they are super quick, easy, and so doughy and delicious.

How it’s made, notes
So easy! All you need is a spice cake mix, one can of pumpkin, and chocolate chips. That’s all. Just mix the spice cake mix and the pumpkin together until well combined then add the chocolate chips. A fabulous sticky orange dough will form. Add large spoonfuls into a prepared baking sheet about 1-2 inches apart. I can usually fit up to 8 cookies onto one large tray. and you don’t have to shape them or roll them into balls (actually they can’t roll anyway, the dough is too sticky!). Just plop the dough onto the pan with a spoon one at a time, top with extra chocolate chips, and bake for 15 minutes at 350 F. I prefer to bake one tray at a time because my top oven tray is my favorite to bake on and is better than the bottom for cookies. Feel free to use two trays and bake more cookies at one time. Let these cool for a few minutes before you try them. You can store these out at room temperature or in the fridge – they are delicious cold too!

Ingredients
- 1 can pumpkin
- 1 box spice cake mix
- 1/2 cup chocolate chips + a bit more for the tops of the cookies
Instructions
- Preheat the oven to 350 F and prepare two baking sheets.
- In a large bowl, mix together the spice cake and pumpkin until well combined. Fold in the chocolate chips.
- Add large spoonfuls of dough for each cookie onto the baking sheet until you have filled up the two pans. Don't roll or shape them, just drop that dough in any shape onto your baking sheet! Keep each cookie about 2 inches apart. Top with extra chocolate chips.
- Bake for about 15 minutes. Don't over bake! (see notes). These cookies have no eggs so they can be a bit undercooked and still fabulously gooey and delicious (honestly the best part). Enjoy!
