Tortellini Sausage and Vegetable Soup (Instant Pot or Stovetop!)

Soup time! I love a fall soup packed with delicious vegetables, pasta and meat. This soup has everything you want and is so delicious, easy to make, and packed with great ingredients. You can make this with an Instant Pot or just on the stovetop. Both are quick and easy – this soup is the comfort food you need this fall!
Inspiration and thoughts
Time for soup! Of course when I say that my first thought is Seinfeld (right?!). But this time definitely so much soup for you.
This soup was inspired by my absolute love of what I call “stuffed soups.” Stuffed with everything delicious. I love a great brothy soup, but I also really love a soup packed with delicious ingredients: full of veggies, meat, pasta…all my favorites. This one is just that.
My mom makes her famous chicken soup, which might be the best soup in the world and my favorite. It definitely isn’t a stuffed soup but is so good, and inspired me to use some of my mom’s techniques but move it to the Instant Pot. As soon as October hits, I am all about soups for dinner. It is still fabulously sunny and delightful weather in San Diego, but the mornings and nights are a bit chilly. Perfect for a nice warm bowl of soup.
I also am using my Instant Pot for this recipe. I have used the stovetop as well for it, but now I try to use the Instant Pot as much as possible for any soups because of the easy prep and cleanup and quick cooking. I also absolutely love the Keep Warm function: as soon as your soup cook time is done the Instant Pot automatically reverts to this function, which keeps the soup nice and hot for as long as you need to. I love this, because I’m always busy when I’m cooking and I might not be ready to serve as soon as the soup is done. Another big reason is that since I am most likely cooking for myself and Eli and he works later than I do, I can have soup nice and piping hot until he arrives, even if the soup finished ages ago. Isn’t that fabulous?!
If you don’t have an Instant Pot don’t worry! The stovetop is just fine and the soup is still very easy and quick to make.
Recipe Notes
This recipe is so easy and straightforward, you’ll definitely want to make this a soup staple. I do! Start off with the Saute function and saute your aromatics: the garlic and onions. Then add the sausage and get it just browned in the pot and mixed in with the garlic and onions. Lastly, add the mushrooms and saute a bit more.
After that, just add in all of the rest of the ingredients except the spinach, close the lid, set and pressure, and you’re done! It is so easy. The Instant Pot will take about 10-15 minutes to come to pressure before it starts to cook.
After the soup is done you can manually vent the steam out (be careful here!). Pour in the spinach, mix it to combine, and you are ready to serve!

Tortellini Sausage and Vegetable Soup (Instant Pot or Stovetop!)
Ingredients
- 9 ounces tortellini
- 8 ounces mushrooms sliced
- 1 lb ground Italian sausage
- 1 small brown onion chopped
- 4 cloves garlic roughly chopped
- 3 cups spinach
- 1 can diced tomatoes
- 2 tablespoons tomato paste
- 5 cups chicken broth
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon crushed thyme leaves
Instructions
Instant Pot
- Turn on the Saute function on the instant pot and add the olive oil. When it is nice and hot add the garlic and onions and saute for 1-2 minutes, stirring frequently. Add the Italian sausage and cook for another 4-5 minutes until just browned (see notes!). Then add the mushrooms and cook for another 1-2 minutes.
- Cancel the Saute function. Add the tomato paste, diced tomatoes, tortellini, chicken broth, and all of the spices and mix together. Put the lid on the Instant Pot. Make sure the lid is set to Sealing and press the Pressure Cook function. Set it for 5 minutes.
- It will take about 15 minutes for the soup to come to pressure. When the pressure cook time is done, manually change the Sealing to Venting (careful!) and let the steam vent out.
- The Instant Pot will automatically switch to the Keep Warm function. Add the spinach and mix it with everything, for a few minutes. Add any extra sprinkles of salt and pepper to taste. Pour into large bowls and enjoy!
Stovetop
- While it cooks, heat up the olive oil in a large pot on medium high heat. Add the garlic and onions and saute for 1-2 minutes, stirring frequently. Add the Italian sausage and cook for another 6-8 minutes until browned, then add the mushrooms and cook for another 1-2 minutes.
- Add the tomato paste, diced tomatoes, tortellini, chicken broth, and all of the spices and mix together. Add the tortellini and bring the soup to a boil. Boil for 7-10 minutes, until the tortellini is cooked through.
- Add the spinach and mix it with everything, for a few minutes. Add any extra sprinkles of salt and pepper to taste. Pour into large bowls and enjoy!
