Creamy Garlic Parsley Tahini Sauce (or Dip!)

Inspiration and thoughts
This is a good one. This creamy garlic parsley tahini sauce is literally so good that my mom told me she could drink it! (Love you mom). Parsley is one of my favorites to add to any dish to make it taste refreshing and delicious, and it’s the star of the show for this sauce (or dip!). Growing up, my mom would add parsley to everything because she loved it so much, and now I do the same with my cooking in so many recipes and as a garnish too.
Parsley is an important ingredient in Middle Eastern food, as is tahini, and I grew up with these two in so many meals. I’m so glad that tahini has grown so much in popularity because it adds such a great taste to sauces and dips, and especially because of its rich flavor.
As much as I love it though, tahini has such a strong flavor that it is best to use with other ingredients, as with hummus, to bring out the best of its flavor. Check out my hummus recipe or my bulgur veggie salad with lemon tahini dressing to see what I mean. Both of those recipes use tahini in different ways to bring out and elevate that delicious flavor! It can be a bit too thick to spoon over anything by itself. But if you add it to this sauce with tons of parsley and top roasted veggies or chicken, or really anything, it is so good.
How it’s made, notes, substitutions
This sauce is great because you can make it so quickly and the blender does all the work for you. Another great thing about this recipe is that it can be a dip too I’ve definitely used this as a sauce and a dip!
Before you blend all of the ingredients, make sure to wash the parsley well and remove the leaves from the stems. You only want to use the leaves for the sauce. A few stems wont hurt, but make sure most of the parsley is just the leaves.
Take all of your ingredients and add them to a food processor or blender. It’s that simple. I used and absolutely love my Ninja blender that my mom got me. I use this Ninja blender for everything and love it.
Blend until smooth and creamy. Taste it too! This recipe is the perfect combo for me, but if you want to add a bit more salt or lemon after you’ve had a taste, go for it. I also absolutely love garlic, so I added 4 giant cloves. If you don’t love garlic or just want a bit less of its flavor, use 2-3 cloves instead.
Pour the sauce onto your favorite roasted veggies, as a salad dressing, or on meat as a delicious and flavorful addition. And again, another great thing about this sauce is that it can also be a dip! Pop it in the fridge for a half an hour to let it firm up a bit and use it as a dip with chips or veggies. It is so good. So healthy. So easy. Hope you enjoy!

Creamy Garlic Parsley Tahini Sauce (or Dip!)
Ingredients
- 4 cups parsley leaves just the leaves, washed
- 4 large garlic cloves use 2-3 if you don't love garlic!
- 1/2 teaspoon salt
- 1/4 cup olive oil
- 1/4 cup tahini
- 2 1/2 tablespoons lemon juice
- 2 1/2 tablespoons water
Instructions
- Add all ingredients into a food processor or blender.
- Blend until smooth and creamy, making sure all of the garlic is completely blended.
- Generously top salads, dinner bowls, or roasted veggies with this delicious sauce, or let sit in the fridge for 30 minutes and use it as a dip with your favorite veggies or chips! Enjoy!
